Sorry for the long delay.  Since Bourdain passed, I felt unmotivated about cooking for a while.

Then Covid happened.  BTW, FUCK YOU COVID!

I slid pretty far down the pole when it came to fitness and well-being.  Covid or not, that’s on me.

The past few months I’ve had a good return to being active physically, and cooking.  Trying to get back to normal.

Those of you that know me, know that I’ve been talking about a Sunday dinner ritual for a very long time now.  The idea came from the movie Soul Food.  The ritual of one-day-a-week where your whole family comes together to prepare and enjoy a dinner with each other.  I don’t know why, but I find that idea very appealing

Since we had Justin, the dinner parties have been substituted with play dates with other parents and their kids.  Steaks and sides have been replaced with order-in pizza and chicken wings.  The only constant has been the wine, and boy do you need them when Ayi’s not around.

But now that Justin’s getting older and can have fun conversations with human adults.  It’s time to give this Sunday (actually more like Saturday in our case) dinner thing a go.

For this I decided to go big.  I got Eddie’s meat supplier to send a three-bone prime rib.  I’ve never booked anything that big before.  Considering the failure of the brisket on the weber Q the week before, I decided to play it safe and bought an Anova sous vide machine.

I broke down the prime rib into two pieces, the two-bone one to be sous vide first and then seared on the pan, and I put the single bone on the grill.

The sous vide one came out perfectly, while I burnt the crapped out of the grilled one because I lost track of time.  Surprisingly, I enjoyed the burnt one much more.  It was a very happy accident.

Finally, we’re back and weekends are going to be popping from now on!
